The Ardara Distillery is an Irish distillery that has just come into being. Based in Ardara, County Donegal, Ireland, it is owned by the Sliabh Liag Distillers group, which owns other distilleries in the region. The group has embarked on a brand new project: to build a distillery in the town of Ardara that will produce a brand new range of Irish whiskeys… A rich and daring range, which already crystallizes all the attention of the whiskey lovers!
It all started in 2020, when the Sliabh Liag Distillers group decided to build a brand new distillery. The group is not a newcomer, and is one of Donegal’s best known whiskey and gin producers. That’s why the construction started in 2020, to be completed in October 2021. Now operational, the distillery has been able to start production.
For the moment, visits are not yet allowed… But the owners hope to open their doors to visitors by 2022. The new facility plans to produce Irish whiskeys in iconic single malt and pot still variants. Their flavors will be distinctive and particularly differentiated. These beverages are intended to be distilled in the pure tradition of County Donegal and to follow 19th century manufacturing precepts.
Thus, these whiskeys use triple distillation, and offer, according to the owners, a rich, smoky and peaty taste. They are impregnated with the cultural and gastronomic heritage of Donegal, and more precisely of the Gaeltacht.
The distillery is magnificent, and plays on the grandiose. On the program, big windows, noble and eco-responsible materials… One can easily distinguish the stills working through their windows ! When the distillery officially opens its doors, you will have access to :
It will take a few more months for the establishment to find its rhythm and to store its production in maturing barrels. But one thing is sure: the place is the object of all the attention for the Irish whiskey lovers and critics!
