The Irish have a great love affair with sausages: more than 2.5 million sausages are eaten every day in Ireland. A rather eloquent figure! At breakfast, lunch, and dinner, the Irish love them and serve them in all kinds of sauces!

A wide range of sausages of all kinds!

In Ireland, there are several types of sausages. All of them have their own specificities, with unique flavours, which cannot be found anywhere else. Their uses are also different, and are eaten according to specific meals. Some of the most popular sausages in Ireland include :

• small smoked sausages, mainly served at the Irish Breakfast,
• bangers, fleshier sausages, served notably for the Bangers and Mash, and the Coddle
• black Pudding, a popular black pudding made in the village of Clonakilty
• white Pudding, a white pudding also from Clonakilty

Irish sausages are usually made from 70% beef or pork (sometimes a mixture of both). The latter should never be too fatty, in order to better appreciate their aromas.

The Irish like to fry, bake, broil, or poach them. They eat them for breakfast, but also as a main meal, as a sandwhich, hot dog, or even as a roll…
