For food lovers, nothing beats a good Irish Cream Bundt Cake! This typically Irish cake is a kind of gourmet pecan pudding, topped with an Irish sauce based on Bailey’s. A rather nice result, to be enjoyed all together at tea time!

A vanilla pudding with Bailey’s Irish Cream

The Irish Cream Bundt Cake is one of those traditional cakes dear to the Irish! It has the merit of being friendly, airy and rather tasty! You can easily find it in most of the local bakeries in the country, but many Irish families prefer to prepare it with their children at home!

It is rather easy to make, and makes an ideal candidate for the snack!

On the taste side, expect some sort of vanilla-flavoured brioche. This combination makes it a rather light and airy cake, despite appearances.

Irish Cream Bundt Cake Recipe


For the cake:

  • 1 half cup pecans
  • 1 packet of “Homemade Yellow Cake Mix” (can be found in all good supermarkets in Ireland)
  • 1 packet of “Instant vanilla pudding mix” (same)
  • 4 eggs
  • 1/4 cup of water
  • 1/2 cup peanut oil
  • 2 knobs of butter

For the sauce

  • a cup of Bailey’s Irish Cream..
  • a cup of icing sugar
  • half a cup of melted butter
  • 1/4 cup of water


  1. Preheat the oven to 165°C
  2. Butter a baking pan and line the bottom with pecan
  3. In a salad bowl, prepare the “Homemade Yellow Cake Mix” cake mix, then the “Instant vanilla pudding mix”.
  4. Mix them together, then add the eggs, water, oil and 3/4 of Bailey’s.
  5. Beat the mixture for 5 minutes
  6. Add the mixture to the pecan-lined pan
  7. Bake 1 hour
  8. In a saucepan, combine the remaining Bailey’s, icing sugar, water and melted butter
  9. Mix, then coat the cake with the icing
  10. Just leave to cool in the refrigerator for 2 hours.
  11. Enjoy your meal!
