Guinness ice cream is a little Irish specialty, which should refresh your palate! Based on vanilla and the famous Irish beer (Guinness), this Irish ice cream will make you discover in a different way the great essentials of Irish gastronomy! On the program, sweet and refreshing flavors, which taste like Ireland and its beers!

An ice cream to enjoy in a pub!

Guinness is not only served in a pint: the Irish like to vary the sensations, by taking the form of ice cream, or by slipping a few scoops of vanilla ice cream into the pint! Guaranteed freshness, with caramelized flavors of the famous beer as a bonus!

Only a few pubs served it, but many establishments, as well as local glaciers, offer it. Tasty, it is aimed at adults only (because of the presence of alcohol, certainly light, but present). This ice cream is made from Guinness and vanilla ice cream: a stunning contrast that deserves to be tasted!



  • for about 2/3 persons
  • 200 of sugar
  • 50 cl whipping cream
  • 35 cl of whole milk
  • 1 vanilla bean
  • 6 egg yolks
  • a can or bottle of Guinness (or another Irish stout)


  • mix the milk, cream and sugar and leave to heat in a saucepan for 5 minutes, stirring regularly, then turn off the heat.
  • Remove the vanilla seeds by splitting the bean and add them to the mixture.
  • Add the egg yolks to the warm preparation, beating regularly.
  • Turn the heat back on under the saucepan and stir until the mixture thickens, without boiling.
  • Turn off the heat and refrigerate for 7 hours.
  • At the same time, heat the beer in a saucepan and let it reduce for a quarter of an hour. Place in the fridge for 3 hours.
  • After this time, add the beer reduced in syrup to the vanilla cream in an ice-cream maker.
  • When the mixture has set, place in the freezer, and enjoy when you feel like it!
