Cashel Blue is an Irish cheese produced in the Cashel region. Almost the only blue cheese in all of Ireland, this cheese is a little marvel of the Irish soil, and more precisely of County Tipperary!
Cashel Blue was created in 1984, in a small farm in Tipperary County. Its milk, from the cows on Mr Grubb’s farm, produces a delicious blue-veined paste, which, once matured, becomes one of the most interesting raw cheeses in the country!
Considered as a true product of the terroir, it is now sold everywhere, in supermarkets and small shops in the country, but also in Great Britain and the United States.
It is a little marvel to be tasted on bread, with a salad, or red meat!
