Once again, the Irish use potatoes to make tasty dishes! And if you don’t know the Boxty, you can catch up! This is a slightly thicker pancake, cooked with potatoes. It can then be filled with potatoes and any other filling you like…

Boxty is a centuries-old traditional Irish dish, which takes the form of a large pancake filled with potatoes and other ingredients that you can add as you wish.

There is no real rule, and Irish people like to eat it regularly, with a white sauce and a good pint.

The dish is delicious, similar to a potato doormat (but thinner), easy to make and just as easy to eat!

You can find them all over Ireland, whether in Irish gourmet restaurants or in the good old Irish Pubs on the island. Inexpensive, you can expect to pay between 8 and 12€ for the Boxty… It will generally be served fairly quickly, because of its ease of use.

For the purists, we advise you to try this traditional dish in one of Dublin’s flagship restaurants: the Boxty House. Run by the Gallagher’s family this establishment prides itself on serving the best Boxty in all of Ireland! To be tried urgently in the famous and ultra trendy Temple Bar area!

Ingredients

  • Number of people: 4
  • Preparation time : 20mn
  • Cooking time: 5mn per pancake
  • 1kg of potatoes
  • 300g of onions
  • 200g of butter
  • 2 eggs

Preparing the Boxty

  • Let’s start together by peeling the potatoes.
  • Wash them in clear water, then grate them into thin slices in a salad bowl.
  • Then add the melted butter, onions, and eggs (Note that it is possible to add a little gruyere cheese to the preparation according to everyone’s taste). Then mix everything together until you obtain a homogeneous whole.
  • Finished? You just have to make a pancake out of it (close to a pancake)
  • Feel free to return them from time to time.
  • You can then serve and garnish them with a sauce or garnish (based on vegetables, bacon, onions…etc) of your choice!
